In honor of 4/20, I have made these chocolate dipped edible cookie dough bites. This is cookie dough filled with chocolate chunks and M&M's, with a hint of cookie butter, covered in chocolate creating a delicious treat cookie dough lovers will enjoy.
What is Cannabutter?*
Cannabutter is cannabis-infused butter used to make cannabis edibles. It can be made using an infuser or using the steps below:
Place 3.5-5 grams of cannabis on a baking sheet and bake at 245 degrees for 40 minutes.
While the cannabis bakes, melt 1/2 cup butter and 1/2 cup water in a saucepan. '
Grind the baked cannabis, and add it to the saucepan. Allow butter and cannabis to simmer for three hours.
Strain the liquid into another container, and place in the fridge until the butter and water separate.
Remove the butter from the water and store it until ready to use.
Ingredients:
1 cup flour, heat treated
1/4 cup unsalted butter
1/4 cup cannabutter
1/2 cup light brown sugar
1/4 granulated sugar
1/8 cup cookie butter
1/4 tsp salt
1/2 tsp vanilla extract
1 cup chocolate chunks and M&Ms
1 1/2 cups chocolate, chopped
Directions:
In a small bowl, mix the flour and salt.
In a separate bowl, cream the butters and sugars until light and fluffy.
Add the vanilla, and gradually add the dry ingredients.
Once mixed, stir in the chocolate and M&M mixture.
Roll dough into balls, and place in the freezer
In a separate bowl, melt the chocolate in either the microwave in 30-second intervals or a double boiler until completely melted.
Dip the cookie dough bites in the chocolate, covering them completely, and allow to cool on wax paper.
Notes:
For heat-treated flour, place flour on a baking sheet and bake at 170 degrees for 10-15 minutes. This will kill the bacteria in the flour, making it edible.
*The Chocolate Dipped Edible Cookie Dough Bites can be made without cannabutter, just replace with unsalted butter. Please adhere to state laws based on your current residence when making.
