S’mores are one of my favorite summertime treats. The key to a delicious s’more is dark chocolate (it offsets the sweetness of the marshmallows) and homemade toasted marshmallows (because everything is better homemade.) These homemade marshmallows are light, sweet, and delicious. Once you make these, you'll never want store bought marshmallows again.
Ingredients:
3 packets unflavored gelatin
1 1/2 cups cold water, divided
1 3/4 cups sugar
3/4 cup light corn syrup
1/4 teaspoon salt
2 teaspoons vanilla extract
Directions:
In a large bowl, mix the gelatin and 1/2 cup of water together until dissolved. Let sit for 10 minutes.
In a saucepan combine the sugar, corn syrup and 1 cup water. Mix on low heat until sugar is completely dissolved.
Bring the mixture to a rapid boil, and allow to boil for 1 minute without stirring.
Pour the sugar mixture into gelatin.
Add the salt and vanilla, and mix for 10-15 minutes until the mixture is fluffy (similar to marshmallow fluff.)
Pour marshmallow mixture into a greased or parchment paper lined pan, press into pan evenly, and let mixture sit overnight.
Once the marshmallows set, cut into squares on a confectioner sugar covered surface.
Toss marshmallows in confectioners sugar, and store in an airtight container.
