With the hot weather we’ve had this week what's better than a piña colada, piña colada popsicles of course! These are everything you love about a frozen piña colada with a twist. The tops of the popsicle are the classic piña colada while the bottom is a pineapple daiquiri. They're the perfect summer treat to enjoy this long weekend.
2 cups pineapple
1/3 cup lime juice
3/4 cup simple syrup
6 ounces white rum
6 ounces dark rum
1 cup coconut cream
In a blender, add the pineapples, lime juice, half the simple syrup, and half the rum. Blend until smooth.
Pour half the mixture into a separate container.
Add the coconut cream, the remaining simple syrup, and rum to the pineapple mixture in the blender. Blend until smooth.
Pour the coconut mixture into popsicle molds, filling the molds halfway. Fill the remaining half with the pineapple mixture.
Freeze for at least 8 hours or overnight.
