A sweet and refreshing mocktail, similar to a pineapple mule, made with pineapple juice, ginger beer, and lime.
2 1/4 cups pineapple juice
1/2 cup basil simple syrup
6 limes, juiced
In a large pitcher, combine the pineapple juice, lime juice, and simple syrup.
Fill an ice-filled glass halfway with the pineapple mixture and top with ginger beer.
For basil simple syrup, combine 1 cup sugar, 1 cup water, and 8-12 basil leaves in a saucepan. Allow to simmer on low heat and stir until sugar is dissolved for about 5-10 minutes. Strain liquid and allow to cool before using.
