I think my favorite thing about Christmas Day is breakfast with my family. We would open presents, then enjoy an assortment of egg dishes, breakfast meats, and pastries for breakfast/brunch. This year, I decided I wanted to make scones for Christmas breakfast. I was timid at first because I’ve had scones that have been hard and dry, but when making my test batch over the weekend, I was pleasantly surprised. These savory bacon cheddar chive scones are flaky and delicious.
Ingredients:
2 cups flour
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
1 1/2 teaspoons baking powder
1/4 teaspoons pepper
1/2 cup butter, chilled
1/3 cup chives
1 1/2 cups cheese
1 cup bacon, cooked and chopped
1 cup heavy cream + 2 tablespoons for brushing
Directions:
In a small bowl, mix together the flour, salt, baking powder, and peppers.
Use a grater to grate the butter. Add butter to the flour mixture, and mix the flour and butter together using a pastry blender or food processor until the texture resembles crumbs.
Add the chives, cheese, and bacon.
Gradually add the cream and mix until combined.
Transfer the dough to a floured surface, and form a disc, approximately 7” in diameter. Cover and place dough in the fridge for at least 30 minutes.
Cut dough into eighths, and brush the tops of the scones with cream.
Transfer scones to a baking sheet, and bake for 20-25 minutes at 425 degrees.
