Cherry Chocolate Ice Cream

I recently discovered I really like cherries so I was trying to figure out what I could make, since it was cherry season, and thought ice cream would be perfect. I decided to make cream cheese cherry and chocolate ice cream--it's a mix between cherry cheesecake and Ben & Jerry's Cherry Garcia, sounds so good right? It's a no churn recipe making it super easy and perfect for the summer.


Ingredients:

  • 1/2 cup cherries, halved and pitted

  • 1/2 cup chocolate chunks

  • 3 cups heavy cream

  • 1 can sweetened condensed milk (14 oz)

  • 1 package cream cheese (8 oz)

  • 2 teaspoons vanilla extract

Directions:

  1. In a large bowl, use a mixer to beat the cream cheese until smooth and creamy

  2. Add add the cream, and mix until stiff peaks form

  3. Fold in the condensed milk and vanilla until combined

  4. Add the chocolate chucks and cherries to the cream mixture

  5. Pour the mixture into a loaf pan

  6. Top with additional cherries and chocolate

  7. Freeze for 8 hours

Optional: Stir your cherries with a few teaspoons of sugar before adding them to the cream mixture to sweeten
