These gluten-free flourless brownie cookies are full of chocolatey fudge goodness and super easy to make.
8 ounces bittersweet chocolate
1/3 cup butter
1 cup sugar
1/2 cup cocoa powder
1/4 teaspoons salt
Place the chocolate and butter in either the microwave for 30-second intervals or a double boiler until completely melted.
In a large bowl, whisk the eggs and sugar together until pale and fluffy.
Add the melted chocolate to the mixture. Then gradually add the cocoa powder and salt whisking until smooth and combined.
Place the batter into the fridge and allow the batter to chill for 5-8 minutes.
Use a large cookie scoop to place the cookie dough onto a parchment paper-lined cookie sheet.
Bake at 350 degrees for 7-10 minutes.
Allow the cookies to cool for 5-10 minutes and enjoy.
