Buttery lemon shortbread cookies with a sweet lemon icing
2 tablespoons lemon zest
1 cup butter
3/4 cup sugar
1 tablespoon lemon extract
2 cups flour
1/4 teaspoon salt
1 cup powdered sugar
2-3 tablespoons lemon juice
In a large bowl, use a mixer to cream the lemon zest, butter, and sugar
Add the lemon extract, flour, and salt and mix until combined
On a lightly floured surface, roll out the dough and cut cookies into the desired shape.
Bake at 350 degrees for 8-10 minutes.
While the cookies bake, mix together the powdered sugar and lemon juice until the icing is smooth.
Dip cooled cookies in the icing and allow to set on wax paper or baking rack.
If you're having trouble rolling out your dough, place dough between two sheets of parchment paper and use a rolling pin to roll out the dough until 1/4 inch thick. Once rolled, remove the top sheet of parchment and cut cookies in desired shape.
