Chocolate Dipped Red Velvet Cookies

I can’t believe it’s February already, and we’re a little more than a week away from Valentine’s Day. I love red velvet cake so I’m super excited to share my chocolate-dipped red velvet cookies.

Ingredients:

  • 1/2 cup butter

  • 4 ounces cream cheese

  • 1 egg

  • 2 teaspoons vanilla

  • 2 cups red velvet cake mix

  • 1 cup semi sweet chocolate chunks

Directions:

  1. In a large bowl, use a mixer to cream the butter and cream cheese until fluffy.

  2. Add the eggs and vanilla, and gradually add the cake mix. Mix until combined.

  3. Wrap dough in plastic wrap and refrigerate for at least 2 hours.

  4. On a lightly floured surface, use a rolling pin to roll out the dough until 1/4 inch thick. Use a cookie cutter to cut cookies in the desired shape.

  5. Bake cookies at 350 degrees for 7-10 minutes.

  6. While cookies cool, melt your chocolate in either the microwave in 30-second intervals or a double boiler until completely melted.

  7. Dip cooled cookies in chocolate, and allow to cool on wax paper.

Note:

If you're having trouble rolling out your dough, place dough between two sheets of parchment paper and use a rolling pin to roll out the dough until 1/4 inch thick. Once rolled, remove the top sheet of parchment and use a cookie cutter to cut cookies.
