Coconut Macaroons

I was looking for a coconut dessert to make for my grandmother, who loves coconuts, and decided to make macaroons for the first time. Coconut macaroons are one of the easiest desserts to make. They're a delicious mound of coconut and chocolate, crispy on the outside and soft on the inside. Instead of dipping the macaroons in chocolate, I added the chocolate chunks inside of the macaroon (mainly because I thought it would be easier to incorporate the chocolate) and it was definitely a great idea!



Ingredients:

  • 16 ounces unsweetened coconut flakes

  • 14 ounces sweetened condensed milk

  • 4 large egg whites

  • 1 teaspoon salt

  • 2 teaspoons vanilla

  • 1 cup chocolate chunks

Directions:

  1. In a large bowl, mix together the coconut flakes, sweetened condensed milk, and vanilla

  2. In a separate bowl, user a mixer to beat the egg whites and salt until stiff peaks form

  3. Fold the egg whites and chocolate chunks into the coconut flake mixture

  4. Using a large cookie scoop, scoop mixture into mounds on a parchment lined cookie sheet

  5. Bake for 20-25 minutes until golden
