These are box cream cheese brownies, you read correctly, box brownies. There is nothing wrong with box mixes if you know how to put your own twist on them. These cream cheese brownies are the perfect example. I did not feel like making brownies from scratch, so I got a box of Ghirardelli brownies and made a cream cheese topping. The cream cheese makes the brownies super moist and it tastes like chocolate cheesecake. So good, and so easy.
1 box brownie mix (I used Ghirardelli Triple Chocolate Brownie Mix)
Brownie Ingredients according to box
4 teaspoons vanilla, separated
1 package cream cheese
1/3 cup sugar
In a large bowl, make brownie batter as directed on box, adding 2 teaspoons vanilla.
In separate bowl, mix the cream cheese, egg, sugar, and vanilla until smooth and creamy.
Pour the brownie batter evenly into a greased or parchment paper lined pan, reserving between 1/8-1/4 cup.
Top the brownie batter with the cream cheese mixture, spreading evenly.
Spoon the remaining brownie batter on top of the cream cheese. Then swirl together using a knife.
Bake according to box directions.
Cool, cut, and enjoy!
