These are my new and improved double chocolate chunk cookies. I modified my chocolate cookie recipe to make them richer and fudge-like, and they're perfect. They're super soft and decadent, just like a chocolate cookie should be.
Ingredients:
1 cup flour
1/4 cocoa powder
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon espresso powder
1/4 teaspoon salt
8 ounces semi-sweet chocolate, chopped
1/2 cup butter, softened
1/2 cup sugar
1 cup brown sugar
2 eggs
2 teaspoons vanilla extract
Directions:
In a small bowl, mix together the flour, cocoa, baking soda, baking powder, espresso, and salt.
In either the microwave for 30-second intervals or a double boiler, melt your chocolate until completely melted. Set aside to cool.
In a separate bowl, use a mixer to cream the butter and sugars until light and fluffy.
Add the eggs and vanilla, and add the cooled melted chocolate.
Gradually add the dry ingredients and mix together until combined.
Once mixed, stir in the chocolate chunks.
Roll dough into balls, and bake for 10-12 minutes at 350 degrees.
