Shortbread Cookies

I feel like shortbread cookies are some of the most underrated cookies, but they’re so good and simple. I ran across a shortbread crust recipe when I made lemon bars a few months ago, and I loved the crust so much that I decided to bake these during the week as a quick treat. They’re so easy to make, only requiring three main ingredients, and they’re perfect to add different flavors like fruit or chocolate.


  • 2 cups flour

  • 2 sticks butter

  • 1/2 cup sugar

  • 2 teaspoons vanilla

  • 1/8 teaspoon salt


  1. In a large bowl, use a mixer to cream the butter and sugar

  2. Add the vanilla, flour, and salt and mix until combined

  3. On a lightly floured surface, roll out the dough and cut cookies in desired shape

  4. Bake at 350 degrees for 10 minutes


You can also roll or scoop the dough into balls for thicker cookies
